Our favorite lasagna ever, meat or no meat! Mushrooms with shallots, bechamel sauce, fontina and gruyere cheese.

Reheating instructions:

Microwave – Move lasagna onto a microwave-safe plate. Cover with saran wrap or microwave-safe lid, or leave it off if a crispier/ drier top is preferred. Reheat on high heat 3 minutes, remove from microwave, stir and measure temperature at the thickest part of lasagna. If the temperature does not reach 165F for 15 seconds, return to microwave for 2 more minutes. Repeat until it reaches the target temperature.

Oven – Preheat oven to 325F. Move lasagna onto an oven-safe pan. Cover with oven-safe lid or aluminum foil. Place in oven for 20 minutes and then measure temperature at thickest part of lasagna. If the temperature does not reach 165F for 15 seconds, return to oven for 10 more minutes, leaving off the lid/ foil if a crispier/ drier top is preferred. Repeat until it reaches the target temperature.

    I *loved* this mushroom lasagna. I’ve only ever had lasagna with meat + tomato sauce and didn’t know mushroom lasagna was a thing. But this is better than that traditional version. I also love mushrooms so this was perfect.
