Reheating instructions

Below are the reheating instructions for all the dishes currently in rotation, listed in alphabetical order. The sides are listed last.

Baked penne with roasted vegetables

Microwave – Move baked penne onto a microwave-safe plate. Cover with saran wrap or microwave-safe lid, or leave it off if a crispier/ drier top is preferred. Reheat on high heat 3 minutes, remove from microwave, stir and measure temperature at the thickest part of the dish. If the temperature does not reach 165F for 15 seconds, return to microwave for 2 more minutes. Repeat until it reaches the target temperature.

If the temperature does not reach 165F for 15 seconds, return to microwave for 2 more minutes. Repeat until it reaches the target temperature.

For lentils – Move lentils onto a microwave-safe plate. Cover with saran wrap or microwave-safe lid. Reheat on high heat 3 minutes, remove from microwave, stir and measure temperature at the thickest part of cauliflower. If the temperature does not reach 165F for 15 seconds, return to microwave for 2 more minutes. Repeat until it reaches the target temperature.

For tortillas – Tortillas should be wrapped in a moist, not wet, paper towel and placed in microwave for 3 minutes. Tortillas can also be reheated on the stovetop – heat up a pan on the stovetop and then place tortillas on the pan, one by one. Heat up each side on the pan for about 20 seconds. Serve immediately.

 

Chickpea dal with coconut and raisins over rice

Microwave – Move chickpea dal and rice onto a microwave-safe plate. Cover with saran wrap or microwave-safe lid. Chicken vesuvio

Microwave – Move chicken vesuvio onto a microwave-safe plate. Cover with saran wrap or microwave-safe lid. Coriander pork loin with balsamic roasted onions

If the temperature does not reach 165F for 15 seconds, return to microwave for 2 more minutes. Repeat until it reaches the target temperature.

The carnitas meat and tortillas should be reheated separately (salsa does not need to be microwaved but should be kept at under 41 degrees F in the refrigerator). Move carnitas meat onto a microwave-safe plate. Cover with saran wrap or microwave-safe lid. Reheat on high heat 3 minutes, remove from microwave, stir and measure temperature at center of dish. If the temperature does not reach 165F for 15 seconds, return to microwave for 2 more minutes. Repeat until it reaches the target temperature. If the temperature does not reach 165F for 15 seconds, return to microwave for 2 more minutes. Repeat until it reaches the target temperature.

Sauteed zucchini – Serve at refrigerator temperature or microwave for 3 minutes, or until temperature reaches 165F.

Roasted potatoes – Microwave uncovered for 3 minutes or until temperature reaches 165F. Can also be reheated in the oven set at 325F for 15-20 minutes or until internal temperature reaches 165F.

Wild rice – Microwave covered for 3 minutes or until temperature reaches 165F.
